Unicorn Bars

Okay, they aren’t actually unicorn bars, BUT they are BIRTHDAY CAKE Batter rice crispy squares.

Do you love cake?

Do you love sprinkles?

Do you love marshmallows?



Okay so now that we’ve established that everyone loves rainbows, marshmallows, ponies, and unicorns we can finally get started.

Here’s what you’ll need to make the unicorn bars.

  • 1 1/2 sticks of butter
  • around 40 large marshmallows
  • 1 1/2 cups of confetti cake mix
  • 1/2 tsp vanilla
  • 6 cups rice krispies
  • 2 Tablespoons rainbow sprinkles


Put a pot on low to medium heat.

Okay, good. We can all manage to do that.

Next put the 12 Tablespoons of butter in the pot. ¬†Yes, it’s a lot of butter, but you’re adding cake mix, so go big or go home. Or go home and be big. Either way, I’m not here to judge.

Once that is melted you can add your marshmallows in. Mix that around until everything is nice and smooth.

This will be a lot looser than what you’re used to, if you’ve ever made rice krispie treats before. Don’t panic.

Turn the heat off.

Add the cake mix in. This will bring everything back to a texture that you’ve seen before. Once that’s mixed in, add the vanilla extract.

Mmmmm. Smells like cupcakes.

Next step is to add rice krispies and the sprinkles. This is where you have to start working fast, because the marshmallows will start to cool.

Be careful while mixing because you don’t want to crush the rice krispies!

Next, pour (or spoon) your mixture into a greased (with butter) pan. Should be about 9″x13″.

Let it cool and cut into squares!
